Our seafood buyer describes the color of these Golden Shrimp as “that kind of gold scattered across the sky and water on a cloudless morning before sunrise” and we can hardly imagine a lovelier leading line for this offering. Like all of our shrimp from the Gulf of Mexico, farfantepenaeus aztecus is caught on a small vessel that is part of a decade-long Fishery Improvement Project in the Gulf, representing a partnership that we are extremely proud of. Of all their catches, Golden Shrimp tend to settle the farthest from shore and the deepest below the surface.

In the kitchen, Golden Shrimp are more assertive than any of their Gulf counterparts. Their texture is firm and snappy, with briny brightness reinforced by exceptional minerality, all qualities that help it withstand deeper cooking than most American shrimp. In our opinion, this selection is best represented when either cooked briefly and intensely or simmered nice and slow. Either way, if looking for a knockout “cooking shrimp” that can shine through a complex recipe, this is the choice.
